I adore baking, and one of my favourite things to do is bake for other people! My banana bread seems to go down a treat with all the family. It keeps well, tastes great and personally.. I think its even acceptable for breakfast!
You will need:
- Loaf tin (8″x5″)
- 285gms plain flour
- 1/2 tsp. salt
- 1 tsp. bicarbonate of soda
- 110gms butter – plus extra for greasing
- 225gms caster sugar
- 2 free range eggs
- 4 bananas mashed – the ripper the better
- 85ml buttermilk
- 1 tsp. vanilla extract
First you need to pre-heat the oven to 180°C (160°C if fan assisted – gas mark 4)
Next – sift the flour, bicarb soda & salt into a mixing bowl.
In a separate large bowl – cream together the butter & sugar until light and fluffy.
Into the bowl with the butter & sugar mix – add the eggs, mashed bananas, vanilla extract & buttermilk, and mix together.
Fold the flour mixture in to the bowl.
Grease the loaf tin and pour the cake mix in.
Transfer to the oven, and bake for around an hour, or until well risen and golden brown.
*Before taking the cake out of the oven make sure the middle is not stodgy by poking a knife or a skewer into the middle and if it comes out clean then its done.*
Remove from oven and allow to cool in the tin for a few minutes before turning out onto a cooling rack.
Tastes lovely with a handful of walnuts and a cuppa coffee!
