These Blondies are my favourite things to bake – and eat! They taste amazing and are so simple to make, and I think they are perfect for this time of year with a cup of coffee and a Christmas film! They will satisfy the deadliest sweet tooth and are great for sharing. Popped into a sweet little biscuit tin or wrapped in baking paper and put in a gift box they would make great thoughtful gifts over the festive period too.
You will need:
- 15ogm white chocolate
- 150gm unsalted butter
- 250gm soft brown sugar
- 1tsp vanilla extract
- 3 eggs
- 1 egg yolk
- 150gm plain flour
- 100gm vanilla fudge pieces
- 100gm walnut pieces
- 50gm white chocolate chips
First preheat the oven to 180°C (160°C if fan assisted – gas mark 4) and line a tray bake tin with baking paper.
Next melt the white chocolate in a bowl over a pan of simmering water.
Once the chocolate is melted cream together the butter, sugar & vanilla extract until pale and creamy. You then need to beat in the eggs & egg yolk.
Now fold in the flour, and then the melted chocolate.
Leave a handful of the fudge, walnuts and chocolate chips to one side – and fold the rest into the mix.
Pour the mix into the tray bake tin and sprinkle the fudge, walnuts and chocolate chips over the top of the whole bake.
Bake for 30 – 35 mins or until the knife is clean when you poke it into the bake.
Leave to cool down before cutting it into pieces, I usually get 12 blondies from this recipe.
